Salmon Teriyaki

This is a delicious and easy-to-make salmon. There is never a piece left at the end of the meal. I hope you enjoy:)

Ingredients:

1 lb salmon fillet
2 T sugar
2 T soy sauce
2 T white wine
1 clove garlic, crushed
1 t ground ginger (optional)

Directions: 

Combine all ingredients besides for the fish.
Pour over fish, cover and refrigerate at least 1 hour.
Preheat oven to broil.
Remove salmon from marinade, reserving marinade.
Place fish on a broiling pan.
Broil 10 minutes per inch of thickness, basting with marinade halfway through cooking time, or until fish flakes when tested with a fork.

Marinated salmon

I love this recipe because it can be prepared in advance and doesn't require warming. ENJOY! 

Ingredients:

5 pieces of Salmon 
1 large onion sliced 
1 cup water 
1 cup vinegar 
1/2 cup sugar 
1 cup ketchup 
1 teaspoon salt 
1garlic clove
pickling spice 

Directions: 

In a pot, cover salmon with cold water. 
Bring to a boil and simmer for 7 minutes.
Allow salmon to cool
Place onion slices on bottom of glass dish. 
Place cooled salmon slices on onions. 
Mix together remaining ingredients and pour over salmon. 
Cover well and put in the refrigerator. 
Marinate for at least 6 hours and overnight for better taste.

Salmon Teriyaki 2

The best part of this recipe is that the dressing can be prepared in advance and the rest of the recipe is quick.  A great recipe for days when you have only 20 minutes and what will we eat??? (just prep the dressing in the beginning of the week... just in case :)

6 salmon fillets 
salt and pepper 
Oil

Place salmon in a baking pan. 
Season the salmon with salt and pepper and spray/smear with oil 
Bake at 450 for 15-20 minutes (DO NOT OVERBAKE)  
Meanwhile combine the following ingredients:

1 cup duck sauce (any sweet and sour/ plum sauce) 
1 tablespoon sesame oil 
1/4 cup soy sauce 
1 tablespoon honey

When the salmon is ready, glaze with sauce. 
Optional: sprinkle sesame seeds on top

Hamburgers

Spring is here at last, and we are all excited for the outdoors; barbecues, get- togethers and more. This recipe has been adapted from the "Spice and Spirit" cookbook, your one stop cookbook, for all your Kosher, traditional recipes and more.  
 

Ingredients:

2 lb ground meat 
3 eggs 
1/4 cup matza meal or bread crumbs 
1 teaspoon salt 
1 tablespoon chopped onion (or onion powder) 
2 tablespoon ketchup 
2 tablespoon mustard 
optional: 1/4 cup water

Directions:

Combine all ingredients in a large bowl and mix well. 
Pre-bake for 5 minutes and then place on grill.  
Or, broil until golden brown and slightly crisp. (15 minutes on one side and 5 on the other) 

Stuffed peppers

This is a fairly quick recipe, and the greatest thing about it, is that they are so pretty. They are great for a supper, and can be used to entertain as well. 

Ingredients:

3-4 colored peppers 

Filling 
1 lb ground meat 
1/2 cup raw rice 
1 egg 
2 big squirts of ketchup 
garlic powder 
black pepper 

Sauce 
2 cup tomato juice 
1 cup tomato sauce 
3/4 cup water 
5 tablespoon brown sugar 
  
Cut off the tops of the peppers (I like to keep them to put on top of filling) and clean the inside 
Combine all the filling ingredients and fill the peppers (leave a bit of space) 
Optional: place upright the tops back on the peppers 
Place in 4 qt pot and cover with sauce 
Cook for 1 1/2 hours

Sweet & Sour Meatballs

Meatballs is one of the favorites at our house, and I love it since it freezes amazing! I prepare this in larger quantities (15-20 lb) and freeze in supper sizes. Im giving you the smaller version but it doubles, triples, etc really easily. 

For those that asked this is from the Purim in the Palace menu ;)

Meatballs ingredients:

1 lb ground beef
1 egg
1/3 cup matza meal (breadcrumbs work also)
3/4 teaspoon each: salt, black pepper & oregano 
(optional: 1/2 onion grated- my kids don't like pieces in their meatballs so I skip it)

Sauce:
1 cup jellied cranberry sauce
1/2 cup tomato sauce
1/4 cup ketchup (you can use tomato sauce for it all)
1-3 Tablespoon brown sugar
2 teaspoon lemon juice

Directions:

In a large bowl, mix meat ingredients and set aside. (If its too thick, add a bit water)
Mix sauce ingredients in a pot and cook  over low flame for 1/2 hour.
While sauce is cooking, form meat into balls
Stir it until its smooth (at times, Ill use the immersion blender to quicken it up)
Add meatballs into the sauce and simmer for 1 hour

Enjoy with spaghetti or rice

Simple Chicken

This recipe is for those days that your house is on empty (or almost) and you're in a rush...

Ingredients: 

4 pieces chicken
1/3 cup honey

3 tablespoon mustard
3 tablespoon soy sauce
(optional: bread crumbs or matza meal)

Directions:

Mix honey, mustard , and soy
Dip each piece of chicken into the mixture and put into baking pan.
(optional: sprinkle bread crumbs over the chicken)
Bake covered @ 350 for 1 1/2 to 2 hours.

Mouth-watering chicken

This recipe was the first chicken I tried out for my then-new husband and I passed the cooking test, it came out delicious. Since then, I have passed on the recipe countless times, and it is my pleasure to share it with you.

Ingredients:

4 chicken bottoms 
1 large onion, diced 
1/2 cup ketchup 
3/4 cup brown sugar 
1 tablespoon vinegar 
1 tablespoon soy sauce 
3 cloves garlic, crushed 
Paprika & black pepper to taste 

Directions:

Place onions on bottom of 9 x 13 pan 
Place chicken on top and sprinkle with paprika and pepper 
Bake for 20 minutes, uncovered 
Mix together remaining ingredients and pour over chicken 
Bake covered for 1 1/2 hours. 
Eat and pass recipe on :)

Sweet & sour chicken

This chicken comes out very soft and goes really well with a couscous or rice dish. Enjoy!

Ingredients:
4 pieces of chicken (its best to use thighs & legs), best without skin 
1 large onion diced 
paprika 
black pepper 

1/2 cup ketchup 
3/4 cup brown sugar 
1 teaspoon brown sugar 
1 tablespoon soy sauce 
3 cloves garlic, crushed 

Preheat oven to 350. 
Put onions on bottom of a 9 x 13 pan. 
Place the chicken on top of onions. 
Sprinkle pepper and paprika over chicken. 
Bake for 20 minutes uncovered. 

Mix the remaining ingredients together 
Pour over chicken. 
Bake covered for 1 1/2 hours. 
Serve over couscous of your choice.

Sesame chicken nuggets

This recipe is simple yet delicious. Put the right amount of sauce to get the perfect taste, don't overdo it with the sauce. Serve over plain rice.

Ingredients:

2 boneless chicken breast 
flour 
spices (garlic powder, onion powder, salt, pepper, paprika, etc) 
1 cup ketchup 
1 cup brown sugar 
1 teaspoon soy sauce 
oil for frying
optional: sesame seeds 

Directions:

Cut the chicken into bite-size pieces 
Mix flour with seasoning
Toss chicken pieces in seasoned flour, until coated 
Fry for 2 minutes (until almost cooked) 
In a small pot, cook ketchup and brown sugar until boiling, add soy sauce and sesame seeds. 
Place chicken in pan, cover with sauce. 
Cover pan, Bake at 350 for 1- 1 1/2 hours 

Sesame Chicken

We made this with our Mini Chef , and it was a huge hit! The kids loved preparing it, they especially enjoyed wearing gloves. I think, we finally found an amazingly simple and delish recipe. This is a mini recipe, but can easily be doubled, tripled, etc.

2 chicken breasts, skin & bones removed
3 Tablespoon oil for frying

Batter:
2 tablespoon corn starch
2 tablespoon flour
1 egg
½ teaspoon salt
½ teaspoon pepper

Sauce:
2 tablespoons honey
4 tablespoons ketchup
2 tablespoon brown sugar
2 tablespoons vinegar
3 tablespoons soy sauce
1 teaspoon garlic
1 teaspoon sesame oil
1 tablespoon sesame seeds
optional: 1/2 teaspoon cayenne pepper

after:
1 tablespoon cold water
2 tablespoons corn starch
scallions, chopped

In a small bowl, mix together batter ingredients
Cut chicken into bite size pieces
Mix into batter mixture 
Heat oil in large pan
Drop chicken and batter into pan
Allow to fry for approx 3 minutes, until crispy before stirring
Flip and fry on other side until cooked through
In a separate bowl, mix together sauce ingredients
Pour sauce over chicken in skillet and bring to boil
Mix corn starch and water until dissolved
Pour into sauce mix
Stir until sauce thickens
Sprinkle in scallions and heat through
Eat over rice

Fettuccine Alfredo

This is a delicious recipe that is easy to prepare, with fairly simple ingredients. This was served at the Italian Dairy Dinner. ENJOY!  

Ingredients:

1- 16 oz box fettucinne
1 tablespoon butter 
2 cloves garlic, sliced 
3 cup heavy cream 
2 teaspoon salt 
1/4 teaspoon black pepper 
1/3 cup grated cheese (I use Mozzarella) 

Directions :
Cook the pasta according to package directions, until al dente 
Drain and rinse under cold water, mix in a drop of oil to prevent sticking. 
While the pasta is cooking, melt the butter in a pan over medium heat. 
Add the garlic and saute for 3 minutes 
Add the cream, bring to a simmer over medium heat, and cook for 5 minutes to reduce the cream by 1/3. 
Add the spices and pour over the pasta, and toss together with the cheese. 
Serve warm and fresh. 

NOTE: 
If you are short on time, the pasta and cream can be prepared in advance and kept separate. Heat separately before combining. Mix all together and serve warm.
