Apple cheese torte

Here is another one of our delicious cheesecakes that was featured at our Shavuot party! Thanks to our great baker- Nathalie! Enjoy 

Crust:

1/2 cup butter, softened 
1/3 cup sugar 
1 cup flour 

1/3 cup of your favorite jam 

Filling: 

1 package cream cheese 
1/4 cup sugar 
1 egg 
1 teaspoon vanilla 

Topping: 

3 cup sliced apples  
1/3 cup sugar 
1/2 teaspoon cinnamon 
1/2 cup sliced almonds 

Directions: 

Cream butter and sugar

Add flour and mix 
Press the crust dough into bottom of springform pan (or "quick" people: 2 8 in disposable pans) 
Spread jam on crust 
In a separate bowl, beat cream cheese, sugar, egg and vanilla and pour over jam. 
Combine apples, sugar, and cinnamon and place over cheese mixture 
Top with sliced almonds. 
Bake at 450 for 10 minutes. 
Bake at 400 for 1/2 hour 
Cool before removing from pan. 

Liquor marble cheese cake

This cake was polished when it was served at our annual Shavuot party.This cake is brought to us by Nathalie, thank you! 

Ingredients: 

2 packages wafer cookies (pretty ones) 
2 packages cream cheese, softened 
3/4 cup brown sugar 
1 package clear jello 
1/2 cup liquor 
1 cup whipped cream 
4 squares semi sweet chocolate, melted (can be replaced with choc. chips) 

Directions: 

Stand wafer cookies along the edges of spring form pan. 
In a bowl, mix cheese and sugar, set aside 
Mix jello and liquor in a small pot and let stand for 5 minutes 
Heat jello mixture over medium heat and warm.  
Add warm jello to cheese mixture  
Fold in whipped cream. 
Scoop out 1/2 mixture and put aside. 
Melt chocolate and allow cool. 
Add chocolate to 1/2 of the mixture 
Pour chocolate mixtures into pan 
Pour white mixture on top. 
Swirl with knife to marbelize. 
Refrigerate and eat!!!!

Marbled cheesecake

In honor of Shavuos, we had a display of delicious cheesecakes. Thanks goes to the kind ladies in the community, who helped prepare these delicacies. 

Ingredients: 
1/2 cup chocolate wafer crumbs or prepared pie crust
1 cup sugar 
1/4 cup flour 
1 tablespoon vanilla 
16 oz cream cheese 
1 cup sour cream 
4 eggs 
5 oz melted chocolate (choco chips, baking chocolate or milk chocolate bar) 

Directions: 
Crush the wafer until fine crumbs and place on the bottom of 8 in round pan or prepared crust (can use spring form pan) 
Mix sugar, flour, vanilla, cheese and cream  
Mix in eggs, one at a time 
Pour 3/4 batter into pan 
Mix chocolate in remaining batter 
Pour the chocolate batter in to the pan in circles and swirl with knife to get the marble look 
Bake at 350 for 45 minutes, until springs back to touch

Cookie cheesecake

On the holiday of Shavuot we have the custom of eating dairy foods (click here for more info on that). So, I present you with an all-time favorite of mine. You can prepare it at home, or just come over for the dairy party on Shavuot (May 20 2018) and taste it there. Happy Shavuot :) 

Crust: 

1 ¾ cup graham cracker, crushed  
1/3 cup margarine or butter
¼ cup Sugar 

Crumble together very well and press into a round pan. You can substitute with a ready-made pie crust

Filling: 
24 oz cream cheese 
1 cup Sugar 
3 eggs 
1 cup sour cream 
½ teaspoon vanilla  

Blend together very well and pour into prepared pie crust

Dough: 
¼ cup oil
¼ cup sugar 
¼ cup brown sugar 
1 tablespoon water 
1 teaspoon vanilla 
½ cup flour 
1 ½ cup chocolate chip

Mix together.
Form into small balls and randomly drop into the cheese batter. 
Bake at 350 for 45 min, or until golden 
Cool in the oven 
Garnish with slices of strawberries and a thin line of chocolate syrup

Mini fruit trifles and crunch

Mini Fruit trifles 

Bottom layer:
you can chose to do all or some. I like to use whats cheapest in the season. I will substitute with apples at times- though then it needs to prepared closer to eating time ;)

2 cans of pineapple tidbits (you can use the juice)
6 kiwis, cubed
2 pints strawberries, cut in to quarters
2 boxes blueberries

Sauce: 
Frozen Strawberries
1/2 cup orange juice
1 tablespoon vanilla 

Crunch: 
1 cup rice krispies
6 tablespoon oil

1/3 cup brown sugar 
Handful of chopped walnuts or almonds

Layer fruits in a plastic wine cup (or any clear glass...)

Put all sauce ingredients in food processor until smooth sauce- add juice if necessary. Set aside- can be made in advance and refrigerated  


The crunch can be prepared in advance and frozen: Put all crunch ingredients in food processor and crush on pulse- not to fine. Bake at 350 for 8-10 minutes (make sure it doesn't burn)
If freezing- allow to cool before bagging


When ready to serve- pour the sauce over the fruits
Sprinkle top with crunch (be generous as it is very delicious)

Chocolate & cookie pie

After I tasted this during one of the celebrations at my sister's wedding, I knew that I have to make this. Its now one of the favorites  at our Shabbat dinners. It freezes so well, and can be served frozen or room temp.

Ingredients: 

Prepared pie crust 

Fudge layer:
1 cup oil
1 cup sugar
1/4 teaspoon baking powder
2 eggs
1/2 cup flour
1/3 cup cocoa  

Cookie layer
2 tablespoon oil
2 tablespoon brown sugar
2 tablespoon sugar 
1 tablespoon soy milk
1/2 cup flour
1/3 cup chocolate chips (mini works best)

Directions: 
In bowl, mix oil & sugar until combined
Mix in baking powder and eggs
Mix in flour & cocoa
Pour into pie crust
In the same bowl (don't need to wash)
Mix together the cookie ingredients
Evenly distribute the cookie dough over the pie, pushing in the dough as much as possible 
Bake at 350 for 40 minutes
Allow to cool
