My friend, Jodi the caterer, prepared this chicken for Purim in Hawaii and it was a hit. Enjoy.
Huli Huli Chicken
8 chicken bottoms, cut into half
Sauce
1/4 cup pineapple juice
1/3 cup white wine
1/2 cup chicken broth
1/4 cup soy sauce
1/4 cup ketchup
1 Tablespoon fresh ground ginger
2 cloves garlic, crushed
Mix together and pour over chicken
Bake at 350 for 45 minutes covered.
Uncover and bake for additional 20 minutes.
Serve with sweet potatoes or rice
