This recipe has a few more steps but is still very simple. Goes well when you want to serve indivdual portions, as a side for the main course.
Zuchini Mushroom Kugelette
3 eggs
¾ c sugar
1 cup oil
Mix well
1 t baking powder
2 c flour
Add to mixture
1 ½ t salt
12 mushroom, sliced
4 large zucchini, shredded (2 peel 2 unpeel)
1 clove garlic minced
1 spanish onion, diced
Sauté garlic and onion add mushroom and zucchini
Add to mixture
Bake in muffin tins at 350 until golden.
This recipe freezes well.
