On Rosh Hashana, it is customary to eat pomegranates, symbolizing that our deeds are as many as the seeds inside. This is by far, one of the best salads Ive had. Every bowl was scraped! Enjoy

Salad ingredients

1 romaine lettuce or other greens (a blend is the best) 
2 pomegranates seeded
sauteed mushrooms (6 portebello is nice, but 1 container regular mushroom works fine) .
1 red onion, sliced

Dressing ingredients 
 1 ripe avocado
4 garlic cloves
1/4 cup sugar
1/2 cup oil
1/4 cup red/white wine vinegar
1 teaspoon salt
1 teaspoon dried basil

Layer the veggies in a bowl.
Blend together the dressing ingredients and pour over salad before serving.

NOTE: The dressing has stayed good in the refrigerator for 2-3 days. (let me know if longer worked for you)
