Every time that I go home to visit, I ask my mother to rpepare this for me. It is pretty eas, but requires attention on the stove so its not so often that I prepare it. And anyway, mama's food is always better :) Goes well with fish, rice, and of course challah! Healthy salad for a ricecake snack, as well. Enjoy

Eggplant
1 eggplant, peeled and cubed (or wash it and leave it unpeeled)
2 medium onion, diced
1/2 green pepper (substitute with any pepper you may have wilting in your fridge), diced small
1/3 cup ketchup
1/2 cup water
spices to your taste (my mother doesnt do this)

Directions:
Saute onions in deep frying pan, (try to be skimpy with the oil) until golden.
Add peppers and saute for 5 minutes.
Throw in eggplant, and mix, let stew for 3 minutes
Pour in ketchup and water
Mix well,
Keep on low-medium fire, until brown and soft (about an hour) mix every 10 minutes
