Due to the many requests, I am adding the Chicken recipe from our Purim party. The amounts are flexible- have fun! When I prepared the chicken, it sat in its spices for 18 hours- this definitely enhanced the taste. 

African Chicken
4 pieces of chicken (legs and thighs are best, you can use boneless chicken as well, but I like to keep things simpler and cheaper :) )
5 medium onions
oil for frying
1/2 cup parsley sprigs
1/2 cup cilantro sprigs
1 Tablespoon ground ginger (I used the powder- shhh)
1 Tablespoon cinnamon
1 teaspoon black pepper

Directions:
Saute onions unitl translecent, and place in bottom of 9 x 13 pan
place chicken on top with skin
In a food proccesor (or by hand) chop up the greens and mix with spices.
Spread on the chicken.
Bake for 60- 90 minutes (depends on how you like your chicken) covered 
Bake an additional 30 minutes uncovered
Serve on couscous with almonds (recipe coming soon) for the complete African taste
