I love recipes that use up the remaining "stuff" in my fridge. Here is one that is quite easy and extremely flexible! And a beautiful presentation

Roasted Veggies
Your choice of:

Colored peppers, cut into strips
Purple onions, cut into chunky cubes
Carrot, sliced in diagnols
Yellow or green squash, sliced into thick rounds
Mushrooms, cleaned and halved
String beans, washed and trimmed 

Layer veggies into one layer on cookie sheet
Sprinkle on olive oil and spices- salt, pepper, garlic
Bake on 400 for 35 minutes

 NOTE: If you are buying the veggies- you can use plain mini colored peppers as well
