Summer has slowly departed and the cold weather is (approaching) upon us... Time to start cooking those delicious soups again. I try to make one large soup each week and then freeze a few portions for other weeks. Then each week I can rotate the soups, having a great variety. Enjoy the soup!

Lentil Soup:
Note: You can omit the veggies if you'd like and have a thick pureed kind of soup. Feel free to adjust the amounts. Soups are pretty flexible

2 onions, diced
5 cloves garlic, minced (sliced if lazy)
3-4 carrots, diced (sliced if lazy)
3-4 stalks celery, diced (sliced if lazy)
(optional: 3 potatoes, diced)
3 cup red or green lentils
3/4- 1 cup soy sauce (tamari is  preferred)
4 teaspoon salt
( optional: 2 bay leaf- remove before serving)  
16 cups water (add more if necessary)

Directions
Saute onions & garlic in oil
Add vegetable and saute for 10 minutes
Add remaining ingredients and bring to a boil
Cook over low flame for 1 1/2 hours.
Stir occasionally, adding water when needed!
