We had a lovely woman's event this past week. One of the highlights was of course FOOD! Being a salad-lover, I tried a few new salads. This salad was served and very attractive in color. I hope you will enjoy as much as we all did.
Cabbage Salad
1 small head of  purple cabbage, chopped into thin pieces (I prefer chopping by hand vs. the food processor as it comes out crunchier)
2 scallions, sliced
2 carrots, shredded
1 small can mandarin oranges, SAVE the liquid
handful of slivered almonds (or costly pine nuts)
handful of dried cranberries (otherwise known as craisins)

4 Tablespoons brown sugar
4 Tablespoons red wine vinegar
1 Tablespoon mandarin orange liquid
1/2 cup oil
1/2 teaspoon black pepper
dash salt

Combine Salad ingredients in bowl.
Mix the dressing in a small container.
I like to dress right before serving but you can dress it 1 hour in advance as well
