I was looking in my pantry for what to prepare for lunch. I wanted a simple way out with protein, starch and veggies. So the following recipe was created. It is a add-what-you-want kind of recipe.


couscous, prepared
1 onion, minced
4 garlic cloves, minced
2 tomatoes, chopped small
1 cucumber, diced
1 can chickpea, rinse and drain
olive oil
1 lemon, squeezed
salt & pepper

in the same pot that the cousous was cooked in, heat up oil
Saute onion until clear,
Add garlic and 1 tomato, saute for a few minutes
Mix together with the couscous.
Add remaning tomato, cucumber, and chickpeas.
Spice with oil, lemon, salt and pepper
Add what ever you'd like, such as: olives, mango, etc.
