As a newly married wife, I thought I should spend my first months preparing gourmet dinners. I soon discovered that gourmet cooking wasn't for me. But I had to cook good food, and in my opinion it had to be quick and easy :) So I came upon a lo mein recipe that I tweeked a bit and here goes. Let me know what you think.

Chicken Lo Mein
1 box Linguine (or really any spaghetti that you have in your pantry)
2-3 chicken breast cut in to thin strips (this is the hardest part:)
2 onion, diced
2 peppers, diced
1 container mushroom, sliced (canned mushrooms work well)
handful of snow peas, cut into squares
optional: baby corn pieces
Salt, garlic, paprika, pepper to taste
1/2 - 1 cup soy sauce

Directions:
Cook  pasta according to instructions, drain and set aside
Saute onions until golden,
Add peppers and mushrooms to onion, saute until soft
Add snow peas and saute for 5 minutes.
Place veggies in a bowl
In the same pan, saute chicken pieces until white.
Add the veggies back to the pan, and spice to your liking.
Add veggies to pasta and pour in soy. 
Mix and eat.
Note: You can cook the pasta with the veggies as well
