Betcha won't guess what's in this... better not to tell anyone :) I first tasted this when I was a counselor in day camp. Our sweet director sent it over before Shabbat. Of course we all wanted the recipe from her, after she was sure that we had finished it did she tell us that there was zuchinni in it. Well I now make it and wait till its scraped to share the secret ingredient Enjoy!

Zuchinni Cake
2  cup flour
2 teaspoon baking soda
1 teaspoon baking powder
1 Tablespoon cinnamon
2 unpeeled zuchinni grated (2 cups when grated)
3 eggs
2 cup sugar or 1 ½ cup brown sugar
1 cup oil
2 teaspoon vanilla

Beat eggs with sugar
Add in zuchinni
Mix all dry ingredients and add to mixture
Pour in 9 x 13 pan and bake for 1 hour or until toothpick comes clean
Freezes well
