I got this recipe from a dear friend, who just celebrated her wedding this week. It has a unique flavor to its dressing and is quite colorful. There are no specific amounts for the veggies, do as you most desire! Enjoy

Spinach/ Romaine Lettuce
Purple cabbage, chopped
White cabbage, chopped
Red pepper, sliced in thin strips
Yellow pepper, sliced in thin strips
Purple onion, sliced
Dried Cranberries 

1/2 cup oil
2 cloves garlic
1/4 cup vinegar
1/2 cup sugar
1 tsp curry
1 tsp mustard
1 tsp honey

Sesame seeds, toasted
Slivered almonds, toasted

Layer salad ingredients in a bowl.
Mix together all dressing ingredients and pour over salad before serving.
Sprinkle the crunch on top..
I would suggest to blend the dressing ingredients, as this will give it a better consistency and flavor.
