Chicken Cutlets are great, as they freeze beautifully. I bread my chicken and fry them, then I freeze them and take them out to bake in different sauces, making each supper unique.

Sweet Chicken Cutlets
1 1/2 lb Chicken breast, cut into 6-8 pieces
Matza meal, bread crumbs
Spices
1/2 cup ketchup
1/2 cup vinegar
3/4 cup water
2 tbsp lemon juice
1/2 - 3/4 cup white sugar
1/3 cup brown sugar

Mix spices and crumbs
Dip each piece of chicken in the spices, until coated on both sides.
Bake or fry until cooked. 
While frying (or baking) mix remaining ingredients together
When  done, pour mixture over the chicken and bake for an additional 1/2 hour.
Serve with mashed potatoes or rice.
