This is a great side for any simple dish. It freezes very well.

Zuchinni in Tomato Sauce
1 large onion sliced
4-5 zuchinni, peeled and  sliced in circles 
1 can tomato sauce
1/4 cup water
1/4 brown sugar
black pepper to taste

Saute onion in oil.
Add zuchinni and let sit for a few minutes
Add remaining ingredients and bring to boil.
Lower flame, cover and allow to cook for 1 1/2 hour.
Serve warm over rice.
