Do you have extra bananas that are overripe (black) and you don't know what to do with them? This is a delicious cake which can be made with or without the chocolate chips (for those ever-dieting people).  A slice of this cake anda hot coffee- YUM! Enjoy

Banana Chocolate Cake
3 eggs
2 cup sugar
1 cup oil
2 1/2 teaspoon baking soda
2 1/2 teaspoon hot water
1 teaspoon vanilla
2 bananas, mashed
1 cup water/ juice
2 1/2 cup flour
(optional: chocolate chips)

Beat eggs and sugar, add oil.
In a separate bowl, mix together soda and water, add to batter
Add vanilla and bananas, mix well
Alternately add the liquid and flour.
Pour in to 9 x 13 or 2-3 loaf pans.
If using choc. chips, add now
Bake at 350 until toothpick inserted comes out clean.

NOTE: If you don't have time to bake, freeze the bananas as they are and defrost when you want to bake.
